    Yes, your approach is correct. But instead of starting at ISO 100, depending on the lighting, you can start at ISO 400 or even ISO 800.

    For the second part, no need to push beyond f8. Depending on the lens, please do check the MTF chart to understand the sharpness of lens at a given aperture. And yes, exposure compensation is the one which is going to help you control the blown out areas.
