This camera & lens is a powerful combination. The RF 100-500 is a very light & capable lens but please note that it has a limitation while using an extender, you will be able to use only 300mm to 500mm (i.e. 420 to 700 say with 1.4x)of its focal length. The use of extender Canon RF 2x will give some loss of quality while quality loss will be quite minimal with RF 1.4x. 🙏

Sir, I am a canon user but I like to read a lot about other cameras & lenses besides of canon. As per my knowledge, both the lenses have nice image quality and sharpness but they may have some cons also in the desired combination.
On a Sony A7 III, the Tamron lens may give some auto focus issues in comparison to native Sony lenses. The Sony E 70-350 aps-c lens with a full frame camera A7 III will give a cropped image circle (thereby with lesser resolution/mega pixels) especially in focal lengths 200 mm & above. So, one may not enjoy the complete benefits of a full frame image sensor.

The third party lenses (Tamron or Sigma), though very good & economical, said to have some issues with the auto focusing system of Canon R Series Cameras. So ensure good compatibility before purchasing.

Then, you may do a good research online for extensive reviews on these lenses & their performance with Canon R8 by pro wildlife photographers. You can also consider Canon RF lenses like RF 100-500mm f4.5-7.1L IS USM (though quite expensive) or RF 100-400mm f5.6-8 IS USM (quite economical but slow & usable in good light only) and may use them with canon Extenders 1.4 or 2 to achieve the desired telephoto range.
