Hi Vishaka,
I will be arriving at either Sony A1 or the A9 III course soon. Regarding Post Processing, I already have multiple courses on that. A separate course on ACR + Photoshop, Lightroom and also using LR for wildlife images as a part of the wildlife course.

I generally do not like to go with any of the auto mode as I want to be in control all the time.

When you move to mirrorless, it’s not a good option to use the EF lenses on the mirrorless bodies using an adapter. My advice is to go for Sony A7 IV and the Sony 200-600. This is a choice you will never regret and anything else for wildlife photography will be a compromise.

Difficult to get single lens to accommodate all genre of photography. Go with a multipurpose lens like the 24-105 to get started with and then slowly get new lenses.

You can refer the D750 tutorial for your camera as the menu options and the features are almost the same. For learning photography the other courses are helpful as described in the photography learning path document.

If you plan to shoot a lot of action photography, then A9 III since it supports pre capture and 120fps. Otherwise the A1 will do.
